beef tenderloin and arugula toasts prep time: 15 min
cook time: 60 min

2 tbs. of fresh lemon juice
1 tbs. of capers ( chopped)
1 tsp. of olive oil
1/2 tsp. salt
1/4 tsp. freshly ground pepper
2 oz. parmesan cheese shaved  ( roughly 1/2 cup)
1 cup arugula ( cleaned)
1 french baguette styled bread
2  8 oz. beef tenderloins  ( trimmed of all fat)

Pre-heat oven to 325 degrees
In a non-stick skillet over medium high heat
Cook tenderloins ( rubbed with oil, salt, and pepper prior to cooking)
Brown on each side until brown and tender  ( roughly 5 mins. on each side)
Remove tenderloins from skillet and let rest on cutting board for 5 mins.
Cutting across the grain, begin to thinly slice the tenderloin
Meanwhile cut the baguette into slices and arrange on a single layer on the baking sheet
Toast the slices for approximately 6 to 8 mins.
Let toast cool
Place arugula on the toast and top with beef, capers, and cheese
Sprinkle with lemon juice!!
