¼ Cup margarine or butter
1 Cup finely chopped onion
2 Cups 1% low-fat milk
1 Cup beer
2 Cups shredded sharp cheddar cheese
Salt & pepper to taste

In a 3 quart saucepan melt margarine or butter over medium heat.
Add onion and cook 2-3 minutes, or until onions are tender.
Stir constantly and add flour.
Cook 3 minutes.
Gradually blend in milk with a whisk.
Stir in beer.
Increase heat to medium-high and cook for 4-6 minutes until soup thickens and bubbles, whisking constantly.
Remove from heat, stir in cheese until melted.
Thin with additional milk, if desired.
