butternut squash soup prep time: 30 min

INGREDIENTS
Salt and Black Pepper to taste
1 qt. of chicken or vegetable stock  ( approx. 4 cups)
2 tsp. ground coriander
1 large sweet potato ( peeled and diced)
2 medium sized onions  ( peeled and chopped)
3 cloves of garlic
2 lbs. of butternut squash  ( peeled and diced)
1/2 cup  oil
croutons for garnish

DIRECTIONS
Heat oil and add onions and garlic
Cook over medium heat for 5 mins.
Add squash and sweet potato and continue cooking for another 5 mins.
Add stock and bring slowly to boil
Reduce heat and simmer for 25 mins. until squash becomes soft
Ladle soup into food processor ( if necessary) in batches and blend until smooth
Season with salt and black pepper
Reheat soup and serve with croutons
