INGREDIENTS 2 boneless, skinless chicken breast halves ( about 3/4 pound)
4 white or whole-wheat pita breads
2 scallions ( trimmed and sliced)
1 ripe mango ( peeled, cubed, and stoned)
3/4 cup halved seedless white grapes
1/3 cup mayonnaise
1 1/2 tbs. mild curry paste
3 tbs. chopped fresh cilantro
salt and black pepper to taste
2 medium sized heads of romaine lettuce
DIRECTIONS
Broil the chicken breasts under a preheated broiler for 5-10 minutes on each side until cooked through.
Leave to cool and then cut the meat into cubes.
Warm the pita breads in a moderate oven, then cut along half the circumference of each pita and open them
into "pockets"
Mix the scallions along with the cooked cubed chicken, the mango and the grapes.
Beat the mayonnaise in a separate bowl with the curry paste, cilantro, salt and pepper
Add chicken to the mixture of curry mayonnaise making sure that all pieces of the chicken are coated with
the sauce
Chop the lettuce coarsely and arrange inside the pitas and spoon the mixture inside the pitas
* Duck can also be substituted with the chicken
Duck breast should be sauteed with own skin and fat for 6 mins. on each side
