citrus marinated pork with mango chili Sauce prep time: 30 min
cook time: 15 min

For Marinade and Pork

1 1/2 lb. pork loin
1 tbs. crushed black pepper
1 tbs. chopped fresh cilantro leaves
1 tbs. minced garlic
1 cup olive oil
2 shallots minced
1/2 tsp. salt
juice of 2 oranges
and 2 limes ( can substitute orange or lemon rind instead of using limes)

To prepare the marinade
Heat oil, shallots, and garlic in a sauce pan  ( Saute for approx. 5 mins.)
Pour into baking dish
Add remaining ingredients and combine
Marinate in refrigerator for 2 hours turning occasionally

Bring to room temperature

Heat a dry heavy skillet over medium high heat for 5 mins.
Drain any excess liquid from the pork loins and sear on all sides for about 3 or 4 mins.
Transfer to a hot oven  ( 400 degrees) Cover the pork loins and cook for about 10 mins. on BOTH sides.
The temperature of the pork loins should be at least 170 degrees.


1 tsp. sugar
1/4 tsp. salt
1/4 cup unseasoned rice vinegar
1/4 cup chicken stock or water
2 tsp. tabasco
2 cups mango nectar or pureed frozen mangos

Place above ingredients in a sauce pan and bring to a boil
Turn down heat and simmer over medium low heat for 15 mins. uncovered until sauce becomes reduced.
Keep warm
Slice pork loins to desired thickness and pour sauce around the pork loins

For skillet preparation, add small amount of oil to heavy iron skillet before cooking
