Serves 4 to 6
INGREDIENTS
1 fresh ear of corn or 1/2 cup frozen kernel corn
1 tsp. sugar
1/2 tsp. salt
1 tbs. snipped fresh chives
1 tsp. of chopped cilantro
2 tbs. of flour
1 1/2 tsp. baking powder
1/4 cup of milk
1 cup of yellow corn meal
1 cup boiling water
1/3 cup dairy sour cream
1 slightly beaten egg
little cooking oil (used when frying in the pan)
DIRECTIONS
In small bowl combine flour, sugar, salt, and baking
powder
In another bowl add boiling water and begin stirring in
corn meal to make a stiff mush like batter
Stir in milk until smooth
Stir in corn, egg, and chives
Add flour mixture until everything is combined
In large skillet heat oil over medium heat
Begin spooning in batter mixture and fry until golden
brown (turning once or twice) approx. 3 or 4 mins.
Transfer to serving platter and keep repeating until all
batter has been used up.
Best to serve with sour cream that has had chives and
cilantro added in.
