crunchy chicken salad prep time: 30 min

Serves 6

3 tbs. olive oil
1 onion peeled and chopped
4 boneless, skinless chicken breast cut into halves
3 tbs. mild curry paste
3 tbs. mango chutney
2 peaches peeled and cut into match stick like pieces
1 head of celery rinse and cut into match stick like pieces
2/3 cup mayonnaise

Heat oil in skillet and add onion
Cook over high heat until softened
Add chicken and continue cooking for 10 mins. on each side until golden and cooked through
Remove chicken from the pan and allow to cool\
Cut into strips and leave to the side

Meanwhile stir curry paste and mango chutney into the pan with the oil and onions
Mix together gently and cook for 5 mins.
Remove from heat and allow to cool
Mix together peaches, celery, cooled curry mixture, and mayonnaise
Stir in chicken and allow to cool for at least 30 mins. before serving
Serve on a bed of greens
