dark chocolate mousse prep time: 15 min

4 EXTRA large eggs (separated)
7 oz. excellent quality semi-sweet chocolate
1/3 cup of strong hot coffee

Separate eggs and chop chocolate into small pieces
Place chocolate, hot coffee, egg yolks in a blender and blend thoroughly

Beat egg whites with a pinch of salt until "stiff"
Fold egg whites together with chocolate mixture and mix gently but thoroughly
Pour mousse into a soufle dish and chill
Garnish with grated chocolate and a sprig of mint if desired
*  Love doing this one with Pina Colada flavored whipped cream!    YUMMMMMMY!
