fava bean potato omelette prep time: 15 min

8 oz. defrosted Fava beans or fresh, blanched in salt water ( for 5 or 6 mins. / discard skins)
1 lb. cooked potatoes mashed
6 large eggs beaten
1 tsp. ground turmeric
2 tbs. chopped cilantro
1 tbs. chopped parsley
2 tbs. unsalted butter or margarine
6 scallions chopped

Place mashed potatoes in a large bowl
Stir in beaten eggs and ground turmeric
Fold in fava beans, scallions, herbs above, and season with salt and pepper
Melt butter in a large non-stick skillet over medium heat
Pour in potato mixture and reduce heat to very low
Cook without stirring for about 15 to 20 mins. until eggs have set and base is golden brown ( lift with spatula)
Place pan under broiler to brown top
Cut omelette to squares or wedges
Can be served hot or cold
