INGREDIENTS
1 1/2  tbs. cardamon pods
2 tbs. cumin seeds
1 tbs. coriander seeds
1/2 tbs. black peppercorns
1/2 tbs. cloves
1 tsp. ground cinnamon
1/2 tsp. grated nutmeg

DIRECTIONS
Discard skins from cardamon pods and lightly toast above ingredients
Leave to cool
Crush toasted spices to a powder consistency
Blend with cinnamon and nutmeg

Use 2 tbs. per 4 servings
Good for a pork rub for 8 hour marinade and 4 hours for chicken
2 hours for shrimp and for fish 30 mins. in advance

Take salmon fillet and wash thoroughly
Pat dry.
Place seasoning on salmon and marinate for 30 mins.
Sprinkle with kosher salt
Can be baked for 16 to 18 mins. in a 400 degree oven
  OR
Grilled on medium heat for approximately 6 to 8 mins. per side.
