moroccan date, orange and carrot salad prep time: 15 min

INGREDIENTS
3 carrots
3 oranges ( or 2 cans of orange segments)
4 oz. fresh dates ( pitted and cut lengthwise into 1/8ths or 4ths.
1/4 cup of toasted whole almonds ( chopped)

DIRECTIONS
Grate carrots into a mound on a serving dish, or on individual plates
Drain orange segments and place in a circle around carrot mound   ( save juice in can)
Season with salt and black pepper
Pile dates on top and sprinkle with chopped toasted almonds

Squeeze juices from remaining oranges or juice from the can of segments and pour over mound

Chill in refrigerator for about an hour before serving
