"on a budget" apricot pie prep time: 15 min
cook time: 60 min

For Dough:

1 lb. of baking flour
1 cup of sugar and 2 tbs.
1 egg YOLK
1/4 lb. butter
2 tbs. sour cream
1 lemon zest
pinch of salt

1 jar of  Apricot jam
1 egg white
1 cup of chopped walnuts or pecans ( for topping)
3 tbs. sugar

FOR DOUGH portion:
Mix all ingredients together in a large bowl
Divide into 2 equal parts
Roll them both out deciding which one is to become the TOP of the pie, and the other the BOTTOM of the pie
Take pie pan and "grease" with butter. Sprinkle flour to avoid sticking
Put the BOTTOM layer of dough in first and add apricot jam
Place walnuts or pecans in next ( these should be mixed with lemon zest)
Place TOP portion on the pie

The egg white should be mixed with sugar in a small bowl
Brush this mixture on the top of the pie
Bake for 35 to 45 mins. in a pre-heated oven set at 300 to 325 degrees
Carefully check into baking process the bottom of the pie with a spatula to check the "done-ness" of the bottom of the pie.
