9 oz. puff pastry dough ( defrosted)
2 red onions
1 red bell pepper
8 cherry tomatoes ( halved)
3/4 cup chopped mozzarella cheese
Roll out dough and make 3 to 4 inch squares
Trim edges of dough and keep to the side as reserve
Place in refrigerator to chill for 30 mins.
Place dough squares on a cookie sheet
Brush a little bit of water around the edges of the squares and use "reserved" dough to form the edge of the squares
Cut the red onions into thin wedges and de-seed the bell pepper.
Halve the bell pepper after seeds are removed
Place the pepper and red onions in a broiler for 10 to 15 mins. until charred
Place peppers in a ziploc bag and let them "sweat"
Cut the flesh of the skinned peppers into strips
Line the dough squares with squares of the foil to avoid over baking
Bake at 400 degree pre-heated oven for 10 mins.
Remove foil and bake for an additional 5 mins.
Place onions, bell peppers, tomatoes, and cheese into each tart and sprinkle with fresh thyme
Return to the oven for an additional 12 to 15 mins. until dough is golden and serve HOT
