oranges in syrup prep time: 15 min

This recipe works well with most citrus fruit

6 medium sized oranges
1 cup sugar
3 1/2 fl. oz. /  barely sufficient 1/2 cup fresh strong brewed coffee
2 oz. /  1/2 cup pistachio nuts

Finely pare, shred and reserve the ring from one orange.
Peel and leave whole
Place sugar in a heavy pan
Add 1/4 cup water and heat gently until sugar dissolves
Bring to a boil and cook until syrup turns pale gold
Remove from heat and carefully pour barely sufficient 1/2 cup freshly boiling water
Return to the heat until dissolved in water
Stir in coffee
Add oranges and rind to the coffee syrup
Simmer for 15 to 20 mins. turning oranges once during the cooking process
Leave to cool and then chill
Serve with pistachios

* Choose a pan in which the oranges will just fit in a single layer.
Use a deep frying pan if you don't have one big enough.
