pan-fried salmon with sweet soy sauce prep time: 15 min
cook time: 60 min

2 pieces of salmon filet  ( about 6 oz. each)
1 1/2 tbs. soy sauce ( reduced sodium)
3 tbs. dry sherry
1/2 inch piece of ginger root  ( peeled and cut into fine match stick like pieces)
1 small garlic clove sliced
Chopped fresh cilantro or chives for garnish
4 tbs. water

Heat a heavy based frying pan until it is very hot
Brush the cut side of salmon with oil
Place the cut side of the salmon face down into the pan
Cook about 1 min.
Brush the skin with oil and flip over
Cook for an additional 2 to 3 mins. until skin is brown and crisp

Remove from pan and keep warm off to the side

Mix soy, sherry, and water and pour into pan
Add ginger and garlic and bring to a boil and simmer for a few minutes
( Should be reduced to a sticky glaze)
Return the salmon to the pan and turn to coat both sides
SERVE IMMEDIATELY and sprinkle with herbs for that added punch of color
NOTE: Any remaining glaze can be drizzled on top of salmon
