Serves 4

4 medium halves boneless, skinless chicken breast (roughly one lb.)
1 tsp. lemon pepper seasoning
1 tsp. ginger root grated
1/4 cup of salad dressing (Italian recommended)
1/2 cup plum preserves (2nd choice could be APRICOT)
4 fresh plums (or APRICOTS)
3 plums (or 2 APRICOTS) per chicken breast
4 handfuls of mixed greens
2 tbs. margarine or butter

Clean and rinse chicken breasts (pat dry)
Sprinkle lemon pepper seasoning on chicken
Melt butter or margarine in a skillet over medium heat
Add chicken and cook for 8-10 mins. (turning once or twice) until no "pink" is showing
Remove from skillet, cover, and set aside to keep warm
Add to SAME skillet ginger root to the liquid remaining in skillet and stir for about a minute
Add preserves in while stirring and salad dressing
Cook until mixture becomes melted into a "sauce" consistency
Stir in fruit (seeds removed)
Arrange greens on plate and add chicken on top and add fruit mixture.
Rolls can be added to accompany this dish via the Garden Fresh Bakery
