Serves 4

½ stick (1/4 cup) butter
1 onion, finely chopped
1 lb. (about 3 cups) sliced carrots
2 Turnips, finely diced
1 quart water
2 ½ cups of vegetable stock
½ lb. (about 2 cups) sliced potatoes
Pinch of sugar
3 Tbs. heavy cream (this can be optional)
Salt & pepper to taste

Start by putting the turnips, carrots, and onions in a large pot with the vegetable stock.
Season with salt and pepper.
Bring to a boil, cover, and simmer for approx. 20 minutes (until veggies are tender).
Remove from heat and allow to cool slightly.
The mixture can now be pureed in a blender or food processor until smooth.
Return the soup to a clean pot and reheat.
Can be served hot and garnished with a swirl of heavy cream or yogurt.
