red wine onion soup prep time: 15 min

3 1/2 tbs. unsalted butter
2 lbs. of spanish onions ( peeled, halved, and thinly sliced)
1 cup of Cabernet Sauvignon or other similar preferred drinking wine

Melt butter in a large heavy pot with cover
Add onions and saute over medium heat for 30 to 40 mins. until soft and caramelized ( deep brown color)   stirring often with a WOODEN spoon to mix the brown bits
Add wine and cook stirring frequently until most of the liquid has evaporated
Add 6 cups of water and 2 tsp. of salt and fresh ground white pepper
Bring to a boil
Lower heat, cover, and simmer for 20 mins.

Puree 2 cups of soup with onions in a food processor until smooth
Add mixture to the soup pot and cook for an additional 10 mins. uncovered
* Serve with toasted croutons and sliced cheese ( Asiago or Fontina)
* Can be placed under broiler until cheese has started to brown slightly
