shrimp spinach and pink grapefruit salad prep time: 15 min

2 tbs. fresh grapefruit juice
1 tbs. rice vinegar
2 tsp. sesame oil
2 tsp. reduced sodium soy sauce
1 tsp. cream sherry
1/4 tsp. freshly ground pepper
1 bag of baby spinach ( about 10 oz.)
1 pink grapefruit cut into sections
2 tbs. of black or white sesame seeds
Fresh cooked shrimp ( de-veined and tails removed)  about 3 to 4 per person

Combine juice, vinegar, oil, soy sauce, sherry, and pepper into a small bowl

Place spinach topped with grapefruit and sprinkle with sesame seeds
Lay around the outside, or on top, the shrimps to be used
Drizzle dressing on top or serve on the side

NOTE: Sesame seeds can be toasted prior to preparation to enhance the flavor of the salad
