spaghetti with lemon spinach scallops prep time: 10 min

Serves 4. Can be used as a main dish.

8 oz. uncooked spaghetti
1 cup of shredded carrots
2 cups of shredded spinach
3 tbs. lemon juice
3 to 4 cloves of minced garlic
2 tbs. butter
1/4 tsp. of crushed red pepper
1/2 tsp. of lemon zest
1 lb. of fresh sea scallops

Cook pasta in lightly salted water according to instructions
Drain pasta and return pasta to hot pan
Meanwhile, rinse scallops and pat dry In a large skillet melt butter over medium heat
Add scallops, lemon zest, garlic, red pepper and cook for approx. 3-4 mins. until scallops become opaque.
Add lemon juice
Add scallop mixture to spinach and carrots and cooked pasta
Toss gently to combine
