spicy garlic shrimp with papaya salsa prep time: 15 min
cook time: 60 min

1 tbs. olive oil
4 garlic cloves ( minced)
1 lb. of LARGE shrimp ( roughly 20 pieces)  peeled and deveined
3/4 tsp. of dry oregano
1/8 tsp. crushed red pepper or any kind of HOT tabasco typed sauce

Heat a large non-stick skillet over medium heat
Swirl with oil and add garlic
Saute for one minute
Increase heat to medium high and add shrimp along with the remaining ingredients
Saute for about 2 mins. ( Shrimps should be opaque)

For Papaya Salsa:
  1/4 of papaya ( peeled and chopped to cube sized pieces)
  1 tsp. of fresh parsley  ( coarsely chopped)
  1 tsp. of cilantro   ( coarsely chopped)
  1 tbs. of red onion  ( chopped)
  1 red bell pepper  ( seeded and chopped to cube size pieces)
  1 tsp. of extra virgin olive oil or any oil that you would prefer
  1 tsp. of either lime or lemon juice  ( again, your preference)

Mix all of the above ingredients in a large mixing bowl and serve alongside of the shrimp
