spinach fettuccini with tomato Butter prep time: 15 min

6 oz. good quality tomato paste
1/2 cup or one stick of unsalted butter
12 oz. fresh spinach fettuccini
1 tsp. of balsamic vinegar
Garlic for taste

Place tomato paste in a small heavy saucepan
Add 1/4 cup of water,heating gently. Begin adding vinegar, and butter stirring constantly with a wooden spoon until incorporated
Season with salt and pepper

Cook fettuccini according to package instructions being careful not to overcook
Drain fettuccini and reserve 3 tbs. of cooking liquid
Add reserved water to tomato sauce and heat gently
Place pasta on a large warmed platter and topping with tomato sauce
Garnish with parmesan cheese
