steak with warm tomato salsa prep time: 15 min
cook time: 60 min

2 steaks   roughly  3/4 inch thick
4 large plum tomatoes
2 tbs. balsamic vinegar
2 scallions
Montreal seasoning to taste
salt to taste

Season both sides of steaks with Montreal seasoning ( a little bit of salt should be added as well)
Kosher or coarse salt is best
Heat a non-stick frying pan and cook the steaks on each side about 3 mins. for medium rare
Cook a little longer for well done

Meanwhile,  core the tomatoes and place them in a heat proof bowl. Add boiling water for about 2 mins. to get the skins to loosen.
After skins are loosened, cut in half and remove seeds and remaining skins
Slice or dice the tomatoes and scallions
Transfer the steaks to a plate and keep warm
Add vegetables, balsamic vinegar, 2 tbs. of water, and dash of salt to cooking juices in the pan from the steaks
Stir briefly until juice has become warm
Scrape up any remaining steak residue
Spoon salsa mixture over steaks and serve
