stuffed portobello mushrooms prep time: 15 min

1 tsp. canola oil
1/2 lb. turkey sausage ( casing removed)
4 oz. non-fat cream cheese
4 large portobello mushrooms ( stem removed and peeled)
4 drops of hot sauce
2 tbs. chopped parsley
1/2 cup shredded reduced fat cheddar cheese
1 small tomato seeded and chopped

OVEN should be preheated at this time to 425 degrees

Heat oil in a non-stick skillet
Crumble sausage into the skillet and break apart using a wooden spoon
Cook sausage until no pink remains and brown color is achieved  ( about 10 mins)
Transfer to medium sized bowl
Stir in cream cheese, tomato, cheddar cheese, parsley, hot pepper sauce and blend thoroughly

Place mushrooms on a baking sheet and fill the cavities with the mixture and bake for about 20 to 25 mins.
Serve HOT!
