sweet potato leek quiche prep time: 15 min

1 package of frozen phyllo dough cups  ( 12 )
1 leek  ( thinly sliced and washed thoroughly)  mostly white and a little bit green parts
1 cup sour cream
2 egg yolks
1 medium sized sweet potato

Peel sweet potato and slice into small cubes
Boil in a sauce pan with salted water ( should be "done" without being mushy)
At the same time, fry the leek in butter
Add a little bit of oil to the butter mixture
When the leek becomes a golden color, remove from pan
In a bowl mix sweet potato, leeks, yolks, and sour cream
Fill the frozen cups with this mixture and over fill the cups slightly
Bake in a 400 degree oven for approx. 12 to 15 mins.  until golden brown
