tequila marinated shrimp prep time: 30 min
cook time: 15 min

juice and zest of 6 limes
juice and zest of 4 oranges
1 tsp. minced garlic
1/2 cup of tequila
1/2 unseasoned rice wine vinegar
1 1/2 cups of fresh pineapple cut into cubes ( approx. 1 inch)
2 tsp. dried red pepper flakes  ( optional)
1 1/2 lbs. jumbo shrimp  (peeled, washed, and de-veined)

Place all ingredients in a glass bowl
Add shrimp and pineapple
Let marinate in refrigerator for just 30 mins. ( no longer to avoid shrimp from starting to cook)
Remove shrimp and pineapple from marinate and started to thread onto skewers ( alternating from pineapple to shrimp to pineapple to shrimp, etc. until filled)
Note: shrimp should be flat, along with flat side of pineapple to avoid "spinning" on skewer while grilling)
Grill skewers over direct high heat for about 2 to 3 mins. ( each side, until shrimp is "pink" all over and cooked thru)
