toffee bananas prep time: 30 min

4 medium-sized bananas peeled and halved
2/3 cup soy yogurt
1/4 tsp. corn starch
1/2 cup light brown sugar
3 tbs. of brandy  ( for flambe in the end of preparing)

Place brown sugar along with 2 tbs. of cold water in shallow skillet
Heat gently until sugar dissolves
Continue cooking for 3 to 5 mins. until sugar begins to caramelize
Remove from heat

Mix cornstarch into yogurt and pour into pan
Return to heating and whisk until mixture thickens ( the addition of cornstarch should prevent the mixture from curdling)
Arrange the bananas side by side in a single layer in the toffee mixture
Return pan to heat for 8 mins. until heated through
Pour brandy on top and light the brandy
* PLEASE use caution when lighting the brandy mixture to avoid burning Serve immediately!  
Great alternative to ice cream after a heavy meal!!!    
Forget about the calories just one night!!!
