Serves roughly 4 cups

1 tbs. grated ginger root
1 clove of mince garlic
1 tbs. olive oil
3 cups vegetable broth
1 large papaya (peeled, seeded, and chopped)
1/4 tsp. tabasco
1/2 package of tofu cheese (fresh bean curd) drained and cut into small cubes
3 tsp. chopped cilantro
1/4 cup of unsweetened coconut milk
1/4 cup of chopped peanuts
2 tbs. chopped green onion

In large sauce pan, cook ginger root and garlic for 2 minutes in hot oil stir in vegetable broth, papaya, and tabasco
Bring to boil and reduce heat (simmer covered for 12 mins.)
Stir in tofu and cilantro (simmer covered for additional 4 mins.)
Stir in coconut milk and bring to boil
Top each serving with peanuts and green onions
