INGREDIENTS
5 cups of vegetable stock
2/3 cups of dry red wine
2 medium sized zucchini diced
1 large carrot diced
2 celery sticks diced
1 medium sized onion chopped
1 garlic clove finely chopped
1 can of chopped tomatoes ( approx. 14 oz.)
1 tbs. of chopped oregano
12 oz. of mixed canned beans
1 tbs. of tomato paste
Salt and pepper to taste

DIRECTIONS
Place prepared onion, garlic, celery, and carrots into a large cooking pot
Add tomatoes, oregano, red wine, and vegetable stock
Bring vegetable mixture to a boil and simmer for approx. 15 mins.
Mix beans and zucchini into the pot and continue to simmer on low heat, uncovered for another 5-7 mins.
Add tomato paste to mixture, salt and pepper to taste stirring occasionally for another 3-5 mins.
Ladle into bowls and serve with crusty bread or croutons

* Cooked chicken or turkey can be added in along with tomato paste to make a more hearty soup
