1/4 cup reduced calorie mayonnaise
1 tsp. dijon mustard
2 tsp. grated lemon zest
1/2 tsp. salt ( preferred Kosher)
4 drops of hot pepper sauce
1 whole chicken ( roughly 3 1/2 lbs.  skin removed )
3/4 cup cornflake crumbs

Preheat oven to 375 degrees
Spray a large, shallow non-stick pan with cooking spray

Mix together mayonnaise, mustard, zest, salt, pepper sauce in a large bowl
Add chicken and toss to coat
Place cornflakes crumbs in a large ziploc bag and begin adding chicken one piece at a time and shake to coat
Place chicken in baking pan after it has been "coated" and spray lightly chicken with non-stick spray
Bake until golden brown and cooked through
DO NOT TURN while baking
Roughly about 45 to 50 mins.

Slice 2 or 3 baking potatoes to wedges or half inch strips and sprinkle with salt and pepper and bake on a greased baking pan alongside the chicken as a nice dish

NOTE:   Mix can be used on chicken strips or chicken tenders for the kids!!
