INGREDIENTS
2 13oz. cans of lima or cannellini beans ( drained and rinsed)
1/2 cup olive oil
1/3 cup lemon juice
3 cloves of garlic
1 tbs. tarragon or rosemary ( finely chopped) thyme can be used as well
1 tsp. salt
DIRECTIONS
Place beans in a food processor with all of the above ingredients and blend until a smooth paste consistency
Season with fresh cracked black pepper
Great with pita bread or tortilla chips or any of your favorite dipping items
