Good for breakfast as a healthy start to your day

INGREDIENTS
2 beets ( peeled and shredded) - beets should be fresh if at all possible
1/2 cup roasted walnuts (chopped)
1 clove of garlic (finely chopped)
2 large (soaked in water) mozzarella balls of cheese (shredded or diced)
1 Granny Smith (or similar green apple) julienne
1/2 of an orange squeezed for flavor


DIRECTIONS
Mix in a bowl and serve immediately
