The original Garden Fresh Market opened in 1980 on a 1000 square foot lot at 4909 Dempster Street, in Skokie, Illinois. Adi Mor, the founder of Garden Fresh Market, wanted to create a shopping experience that would provide customers with quality foods that are fresh and at a great value. To make his dream a reality, Adi would begin each working day at 2 o’clock in the morning to purchase fresh produce at Chicago's renowned South Water Market and bringing it directly to the store. Adi’s promise to his customers has become Garden Fresh Market’s philosophy and long standing tradition: quality and value.

In 1985, Garden Fresh opened its second store located at 5701 W. Belmont Avenue, in Chicago, Illinois. The 10,000 square foot store generated weekly sales of $6,000 in its first year. By recognizing the need to offer fresh produce and to customize the store to meet the needs of the neighborhood, Adi was able to increase the store’s sales fivefold during its second year. 

His first real venture into a full-line grocery store was in 1993, when Adi purchases a 60,000 square foot shopping center, where Garden Fresh opened another store on Hintz Rd. in Wheeling. In 2014, Adi made the bitter-sweet decision to close this location, and move it up the road 1.3 miles, to the current, much larger location at 770 S. Buffalo Grove Rd. in Buffalo Grove. 

Outgrowing walls, was not something Adi wasn’t used to however. Similarly, in 2006, he made the decision to move the Mundelein store located at 340 Townline Rd., to a 100,000 square foot store in the same shopping center, where it currently operates at 400 Townline Rd., in Mundelein. 

Since the origination of the first two stores, Adi has made it his mission to ensure that the quality and value of the products he sold, would be carried out, no matter the size or location of the store. The most common question asked on the opening day was, “why didn’t you come here sooner?”

Each time a new Garden Fresh location has opened, state of the art equipment has been purchased, specialty departments have been added, and technology has been increased. Yet, throughout the years, Adi’s guiding principle has remained the same: Give customers the quality foods that they like, offer them fresh, and at a great value.
